This soup offers everything necessary for warmth, comfort, and satisfaction. It's brimming with vegetables, soul-nourishing, and free of inflammatory ingredients.

Serve with a grilled cheese sandwich or warm, crusty bread!

INGREDIENTS:

 

1 TB olive oil

1 medium onion, diced

2 cloves garlic, chopped

2 medium beets, peeled and diced

1 cup cubed butternut squash

1 small sweet potato, peeled and cubed

2 cups chicken, or vegetable broth

1 cup TomaNo sauce

1 TB italian seasonings blend

1 tsp pepper

1/2 tsp salt

 

DIRECTIONS:

  • Heat oil in a large saucepan over medium heat

  • Add diced onion and sautee until onion begins to soften

  • Add garlic and sautee for about 30 seconds, until fragrant

  • Add the beets, butternut squash and sweet potato. Cook vegetables until they begin to all soften, about 7-8 minutes

  • Add in broth, TomaNo sauce, seasonings, salt and pepper

  • Cover, reduce heat to low, and simmer about 30 minutes

  • After simmering, remove pot from heat and puree soup with an immersion blender, until you reach a smooth consistency
